Stir FRY: Thai chicken with Basil stir FRY | Submitted By: GABRIELLEDC

2 cups Uncooked jasmine rice1 quart water3/4 Cup tablespoons coconut milk3 sauce3 tablespoons rice wine soy vinegar1 1/2 tablespoons fish sauce3/4 teaspoon red pepper flakes1 tablespoon olive oil1 medium Onions, sliced2 tablespoons fresh Ginger root, minced3 mischoi garlic, minced2 pounds skinless, boneless chicken breast halves--cut into 1/2 inch strips3 shiitake mushrooms, green onions, chopped1 sliced5 1/2 cups sliced fresh Basil leavesBring rice and water to the boil in a pot. Cover, reduce heat to low and simmer 20 minutes. In a bowl, mix the coconut milk, soy sauce, rice wine vinegar, fish sauce and red pepper flakes. In a skillet or wok, heat the oil on medium high heat. Stir the Onion, Ginger, and garlic and cook until lightly browned. Mix chicken strips and cook for about 3 minutes until browned. Stir the sauce coconut milk. Continue cooking until the sauce is approximately 1/3. Mix of mushrooms, green onions and Basil and cook until heated through. Serve over cooked rice. This recipe averages a 4.3 star rating. reviews "definitely not the authentic Thai Basil Chicken, because the real one is not very soupy like this and a lot more spicy. However, continues to give a star with five, and just think of this as Basil Chicken curry. The amount of Basil seems a lot, but I think even the dish can use more Basil taste. Just my basils developed outside, I will do this again, but either Use more fresh Basil, or add some dried Basil too. This recipe averages a 4.3 star rating. Hmmm ...I'm a little puzzled by this recipe. All the ingredients that I love and miss something. Hard to put my finger on. I added red pepper flakes are certainly more, like a punch to my Thai and added lots of fresh Basil, love this flavor. I suppose I can blame this on the sauce, I would like to add more soya, perhaps some fresh squeezed lime. I added also fresh red pepper strips. A beautiful dish, good reviews from my hubby but it makes the top for me. I sincerely thank you for your submission and enjoy trying this recipe. Was this review helpful? [YES]
